China garden Benidorm
I visited a lot of Chinese restaurants in and around
Benidorm, Calpe and even in Alicante. I must admit, in China Garden Benidorm
you come into the range of fine Chinese food. With a group of 7 people we
received a great round table. Staff is very welcoming and a very tidy spacious
dining. Service is impeccable. We opted for a rice table 7 persons. Amazing food!
A nice surprise price wise. Please
spread the word for Chinese food lovers, the place to be.

Vietnamese Bouillabaise @ Esraduke
4 large lobsters, 1 3/4 pounds each
1 pound cod, 24 scampis,
Ice, for cooling
1 cup extra-virgin olive oil
1/4 cup finely grated fresh ginger
3 lemongrass stalks, 1 stalk minced, 2 stalks chopped
into 2-inch batons
3 sprigs fresh basil, stems and leaves separated
2 bulbs fennel, 1 trimmed and roughly chopped, 1 trimmed
and cut into 8 wedges
2 heads garlic, cloves peeled and germs removed
1 bay leaf 1 leek, white and light green parts roughly
chopped
1 large onion, roughly chopped
1 sprig fresh flat-leaf parsley
1 sprig fresh thyme
1 cup tomato puree
2 cups dry white wine
1 tablespoon salt, plus more for seasoning
2 teaspoons coriander seeds
2 teaspoons fennel seeds
1 teaspoon crushed white peppercorns
2 star anise
4 fingerling potatoes, sliced into quarters
2 lotus roots, boiled for 2 minutes and thinly sliced
12 caps shiitake mushrooms, sliced
1 bunch fresh Thai basil, leaves picked
Freshly ground black pepper
1 pound water spinach, quickly sauteed with garlic, for
serving, optional
1 bunch scallions, cleaned and grilled, for serving,
optional
Baguette slices, brushed with olive oil and toasted, for
serving, optional
DIRECTIONS
Bring a large stock
pot of salted water to a boil, and then poach the lobsters for 1 minute. Cool
immediately in an ice bath, and then remove and separate the lobster heads from
the bodies. Trim the gills and chop the lobster heads into small pieces, split
the tails in half lengthwise, and remove the claw and knuckle meat from the
shells. Toss all the lobster pieces, cod & scampis with 1/2 cup of the olive oil, 1 tablespoon
of the ginger and the minced lemongrass in a bowl to marinate. Transfer to the
refrigerator.
Heat a large pot
over high heat. Pour in the remaining olive oil and add the basil stems,
roughly chopped fennel, garlic, bay leaf, leeks, onions, parsley and thyme and
cook, stirring, until softened but not browned, 7 to 8 minutes. Add the lobster
heads and cook, stirring, for 12 to 15 minutes, and then stir in the tomato
puree and continue cooking for 3 to 4 minutes. Add the white wine, remaining
ginger, remaining lemongrass, the salt, coriander, fennel seeds, white
peppercorns and star anise and cover with water by 1 inch. Bring to a boil, and
then reduce to a simmer and cook uncovered for 35 minutes.
Strain the broth
through a fine-mesh sieve into a very large wide pot, using a ladle to press
against the solids to remove all of the liquid; discard the solids. Bring the
broth to a boil over medium-high heat, and then add the fennel wedges, potatoes
and pre-cooked lotus root slices and cook until softened, 10 to 15 minutes.
Remove the marinated lobster tails and claws and add to the pot along with the
mushrooms, Thai basil leaves and green basil leaves. Season the bouillabaisse
with salt and black pepper.
Divide the
bouillabaisse among 4 shallow bowls, and finish the dish with some sauteed
water spinach, grilled scallions, and slices of grilled baguette, if desired.

Convert the Jing (sexual energy) to replenish the brain? True!
As with most young men puberty brought an explosion of hormones. My father warned me time after time not to read porn magazines and masturbate. He said they have a negative effect on me both physically and spiritually. It is common knowledge among older Chinese that sex deplete ones energy. The Yellow Emperor’s Inner Classic, the bible of Chinese medicine, explicitly explains how sex affects you. At that time I just laughed it off, because many western medical journals and studies say sex and masturbation are good for you: just a minor loss of protein which can easily be replenished.
Only after I began Nei Dan (inner alchemy) practice did I realize from my own personal experience, how true that ancient wisdom is. Usually in the Nei Dan process, the first step is to convert Jing (sexual energy) into Qi and use that to replenish the brain. This process is called Huan Jing Bu Nao in Chinese. If you ask the Chinese about this term, I am sure many have heard about it from books, magazine, movies or TV dramas. Sadly, most of the time these days this term is used in a comic way; thus, the younger generations dismiss it as fiction.
Interestingly, just a couple of months ago, I read a study on how watching porn affects our brain. “Researchers found that gray matter volume in the right caudate of the striatum was smaller among frequent porn viewers. Men who watched more porn also showed less activity in another area of the striatum, known as the left putamen … These brain changes are similar to those seen in cocaine addicts, who develop abnormalities in areas, such as the nucleus accumbens and striatum, which are responsible for learning, memory, pleasure, and reward.”

Indeed, anyone with some background in Traditional Chinese Medicine knows that the brain is part of the kidney systems and jing is mainly stored in the lower dan tian, particularly the area between your kidneys (ming men).
